SOURCE:
CADUCEUS CELLARS ELIPHANTE BLOCK, CORNVILLE AZ
In early 2012, just outside of Cornville, AZ, we planted 30 acres on what we refer to as the Eliphante Block. Here we have mostly Italian clones, with a few Spanish and French as well.
PROCESS:
Hand-picked, sorted, punched. Open top and submerged cap fermentation. French cask and puncheon aged 18 months.
ALCOHOL:
13.5% ABV
WINEMAKER:
M.J. Keenan
IMPRESSIONS:
Full-bodied and structured-yet with an uplifting freshness like a garden of sunflowers. Hints of dried roses, mint, raspberry, black cherry, sweet tobacco, and the richness of Medjool dates. After opening it continues to present deepening aspects of its nature as the hours pass. Consider decanting this bottle if you plan to drink it soon.
