Vinification: maceration of the must on its skins for 2 days
Maturation: in steel tanks for 6 months
Food pairing: Tortellini in broth, passatelli in broth, roasted white meat
All our wines are Certified Organic
In the countryside we do not use weeding or systemic treatments; we limit ourselves to the use of Bordeaux mixture (copper and sulfur) in minimal doses and only when strictly necessary.
In the cellar, fermentation takes place spontaneously, without the use of oenological adjuvants.
The doses of sulfur dioxide are well below the maximum allowed by the same organic certification (150mg / liter for white wines and 100mg / liter for reds), and specifically we are around the total values of 30mg / liter for whites and 40mg / liter for reds.
