Tasting Notes
Black pepper, Bing cherry, cedar, fig jam, charcoal. Brut Nature. Creamy bubbles.
Winemaker’s Notes
Harvested September 10-12, 2019. Destemmed, but not crushed, into open top bins. Twice daily punch downs. All spontaneous fermentations. Pressed on September 16th. Free run and cuvee into stainless steel Charmat tank, and sealed so wine would naturally carbonate as fermentation finished. Lees stirred twice during aging. Months after fermentations complete, wine chilled and sulfited. Bottled in late May and early June of 2020.
Nota Bene
A sibling to the still 2019 Two Tons (same harvest, different press cut and vinting). Perfect wine for warm weather grilling. “My body flies the galaxy”
