2020 Two Tons
Climate Positive, 1% for the Planet
Dry red wine. Glou Glou heaven. Tart plums, Bing cherry, blueberry jam, and roses. High acidity, medium body, medium tannins. Recommend serving slightly chilled. Grown in San Diego County and made using only wild yeasts, unfiltered, and with minimal intervention.

Winemaker’s Notes
Grapes harvested and destemmed between 8/27 and 9/8 of 2020. Syrah and Petite Sirah were crushed; Nebbiolo and Zinfandel were not. All spontaneous fermentations. Grapes were pressed on a long, slow cycle in separate lots between 5 and 7 days after harvest. Portions of free run and taille of press cuts blended. Aged in neutral vessels. Months after fermentations complete, wine racked, chilled, and sulfited in March, 2021. Bottled April 11, 2021.
A sibling to the sparkling Darkstar (same harvest, different press cut and vinting). Enjoyed best between fridge and cellar temperatures, and pairs awesomely with high acid foods.
