Care is taken to choose the harvest date to avoid over maturity of the grapes. Harvest is usually â few days after that of its neighbor, Hâut Brion.
• Hand picked.
• Fermentation started in vats act low temperatures then continued and finished in 50% new barrels and 50% 1 year old barrels made of French oak.
• Aged 8 months in barrels on fine lees, with frequent stirring up of the lees in oak barrels.
• Very small production of Picque Câillou Blânc—only 4800 bottles produced per year (400 cases).
Vine-growing methods
Since 2018, the vineyard has gained HEV certification (High Environmental Value), an undertaking reflecting our concern to protect biodiversity and the health of our vine-workers. Biocontrol products are thus applied, while we have banned from use all so-called CMR (carcinogenic, mutagenic, reprotoxic) products.
