Appellation: Saint-Emilion Grand Cru
Viticulture: Organic farming, certified by ECOCERT, no fertilizers or weed killers
Vinification: Destemming, cold pre-fermentation, alcoholic fermentation natural, without the use of yeast. No addition of oenological product.
Ageing: Aged in lightly toasted French oak barrels
The bottling process is done at the property with our very own bottling line. We therefore can choose the day of bottling, according to the lunar calendar, no filtration, and no sulphur are added to the wine during bottling.
Our sulphur dosages are regulated throughout the ageing process with very small amounts. The quantity of free sulphur in the wines is extremely low.
We believe that choice of cork extremely important. We only use high quality natural corks from Portugal. We have the advantage of being able to do each step at the property. From the picking to the labelling.
