The wines are fermented in a combination of temperature controlled stainless steel vats and oak barrels to give complexity while retaining the primary fruit aromas. The Domaine Borgeot Clos de la Carbonade Monopole is considered one of the best parcel located in Bouzeron.
Domaine Borgeot is situated in the village of Rémigny in the Côte de Beaune. Created in 1903, it is now run by fourth generation brothers Laurent and Pascal Borgeot. Together, they work 48 acres of vines, half in red, half in white. Most of their vines are 30 years old or older, with parcels of Santenay ‘Les Gravieres’ and Santenay ‘Vieilles Vignes’ older than 50 years. For over twenty years, their vines have received only organic fertilizers.
They work the soil in winter to keep down weeds and increase micro bacteriological activity. Where they have replanted, they have chosen strains of vines that are low yielding. All these policies are aimed at bringing the harvest to full and perfect maturity.
As the saying goes in Burgundy, if you look at the person behind the wines, you will get an idea of the style of wine in your glass. Domaine Borgeot wines exhibit the calm restraint of Pascal balanced with the exuberance and liveliness of Laurent.
