Domaine des Frères Les Picasses Chinon 2020
This long-recognized terroir gives us a rare wine. It is very fresh, defined by a beautiful redcurrant acidity and a finish which tends towards balsamic type aromas. The tannins are present but already very polished.
Terroir: Small, unique plot on the south-facing hillside of Picasses. Very little clay soil on this slope often revealing its soft yellow limestone rock. Its micro-climate is unique, only rubbing shoulders with undergrowth, tallus and wild oregano.
Examples of work before harvest: Guyot Poussard pruning, light hoeing around the vines, disbudding, rolling up of branches (braiding), no trimming
Harvest: Manual harvest at night to start fermentation at low temperature , manual sorting of the grapes in the cellar, destemmed by hand, pressed with a vertical ratchet press, then crushed by foot.
Vinification: Traditional with native yeasts without sulfur, unfined, unfiltered wine.
Bottling: no SO2 at bottling
Aged for 12 months in Burgundian rooms + 12 months in the bottle in the cellar
