Eladio Piñeiro La Ola Albariño 2019
The vineyards are distributed in privileged areas within the varied orography of the Val do Salnés. After the manual collection of the bunches in the vineyard and subsequent selection in the winery, they are macerated (8-10 hours), pie de cuba is made days before to help spontaneous fermentation with their own “wild” yeasts, fermented at a low temperature very prolonged in time.
After fermentation, from the entire harvest, we select the upper part of the vats of that vintage with the highest fruit load. It is aged for 6 months on its own fine lees, with monthly batonage.
Eladio Piñeiro La Ola Albariño is bottled on Flor day, and we began its commercialization in the month of September 2021.
Nose: Candied citrus peel, apricots, white peaches, floral notes of honeysuckle, minerality.
Taste: Fresh citrus, crisp apple, mineral notes, balanced acidity, structured long and lingering finish.
Gastronomy: Fresh fish and shellfish, rice dishes, roasted vegetables, light game birds.
