Domaine de la Fouquette Cuvée Rosée D’Aurore 2023
Clay and schist with high concentration of monoterpenoid thiols (aka the grapefruit mercaptan), which impart pronounced citrus aromatics even in red varieties. Manual with strict selection to eliminate bunches not reaching optimal ripeness. Green harvest conducted in early summer to limit yields. Manual harvest using small bins with strict selection in the vineyard.
All fruit is destemmed. The rosé is made entirely from direct pneumatic press juice. Fermentation takes place in temperature-controlled stainless steel tanks. No malo-lactic. Aged 5 months in temp-controlled inox tanks before filtration and early bottling (February) to capture and preserve freshness.
Located at the edge of the Maures mountains, the Domaine de la Fouquette is a unique terroir, rich with biodiversity and classified as a “Notre Dame des Anges” (our Lady of the Angels).
The pedoclimatic conditions (clay & shale soil, good sun exposure and significant temperature variations from summer to winter) allow for the wine to express its potential fully.
Here, the vineyards have been certified Organic since 2013 by Ecocert. Moreover, they are cared for following environment-friendly methods in a spirit of continuous improvement (green manure sowing, vitipastoralism…), which allows us to produce genuine vintages awarded every year in the most prestigious competitions.
