BLEND: 100% Pinot Noir
VINEYARDS: ‘Croix Viollette’ is a small, southeast-facing plot surrounded by a stone wall, neighboring an active cloister (the Violet Cross) in the village of Brochon, next to Gevrey-Chambertin. The plot’s well-draining soils mix clay and limestone with gravelly subsoils.
AGE OF VINES: 40-50 years
WINEMAKING: Hand-harvested. Partially destemmed; fermented on indigenous yeasts in temperature-controlled, stainless steel tanks. Aged in older French oak barrels. Bottled unfined and unfiltered.
TASTING IMPRESSIONS: Aromas of violets, crushed stones, black raspberries. Mineral, suave; flavors of red berries, ripe red plums.
PAIRING SUGGESTIONS: Grilled pork sausages; hard French cheeses
