VINEYARD: From a 0.4405 hectare parcel in Lieu-dit Les Vaudayants in Bouzy Grand Cru planted by sélection massale in 1975. Vines are exposed south, south-east.
SOIL: 70 cm of clay on limestone bedrock.
VITICULTURE: The parcel is farmed organically and Rémy implements bio-dynamic practices. Vines are simple Guyot trained. He along with neighboring friends Antoine Paillard (of our Champagne Pierre Paillard) and Benoît Lahaye make their own organic compost to fertilize their vines.
VINIFICATION: Grapes are picked and a double sorting is employed – one immediately at the vines and one before they are gently pressed. Vinification and élevage occurs “sur lies fines” in 228L barrels. Malolactic fermentation is not rushed or controlled and naturally completes. Bottled July 2018, unfined, unfiltered, disgorged without dosage.
AGING: Disgorged with 0g/ L of dosage.
