Mas D’Amile Le Petitou 2018
Appellation: AOP Terrasses du Larzac
Cépages: 60% Grenache, 20% Syrah, 20% Carignan
Age of the Vines: between 40 and 60 years old.
Harvesting: by family, manually. Grapes picked early in their maturity for additional freshness.
Vinification: Traditional vinification. Destemmed, drained & circulated in early weeks followed by light pressure. Cool pre-fermentation. Short maceration. Matured in vats for 9 months.
Petitou: a little story! Le Petitou is the Domaine’s most recent birth, so as with our dear children we’ve called it “Petitou”.
The grapes are de-stemmed and raised entirely in tank. The SO2 additions are minimal and done following devatting, then again during élevage, and a third time after blending. Typically the total amounts to 25 mg/l, which is less than Demeter’s threshold for natural wines (Demeter’s thresholds are 100 mg/l for organic wines; 70 mg/l for biodynamic wines; and 30 mg/l for natural wines).
