South Pacific Style Pils

City of Sails is a South Pacific style Pils brewed using Pilsner malt and a traditional step infusion mash. During the boil is hopped exclusively with New Zealand Taiheke hops. After the boil it rests in our copper coolship for 1 hour and it is then transferred over our baudelot cooler. During the cool open fermentation using a classic Czech Pilsner yeast it is hopped one more time. Finally it is cellared cold for several months prior to packaging.
