OEC Le Pils is the beer that we brewed for the anniversary of The Owl Farm. It was received extremely well there and in the tasting room. We jokingly called it Coolship France back then but we didn’t think that name would fly in the marketplace.
Le Pils is dry hopped using fine aroma hops from the Alsace Lorraine region of France, yielding a beautiful citrusy & floral aroma. Taking it’s inspiration from the unique world of Alsatian white wines, it undergoes a cool open fermentation using a classic pilsner yeast to produce a crispy, dry & refreshing finish.
It is dry hopped for 5 days with 70% Mistral & 30% Strisselspalt.
Malts: Czech Pilsner, Cara Pils
Hops: Loral (For bittering), Strisselspalt & Mistral

In old brewing literature fermentation was often called boiling as the vigorous bubbling drew comparisons to the boiling of liquids. As advanced as brewing science has become, sometimes we are still just as clueless when it comes to the science behind the actual creation of complex flavors and aromas.
