Off Color Oncilla Taxi

Oncilla Taxi is a funky saison aged in a Sangiovese puncheon with Brettanomyces claussenii and a Carmen Miranda hat of tropical fruits including Finger limes, Yuzu, Pink lemons, Mandarin oranges, Mandarinquats, Limequats, Calamondins & Fukushu Kumquats. (John’s sister is convinced we made these up.)

The resulting beer has a pouncing tropical nose and frockling acidity with fleeing notes of perfume, honeydew, and green tea. The sheer volume of acidity from the fruits gives this a very different citric acidity than anything else we have done.
