VARIETIES: 100% Pinot Noir
VINE AGE: From 3 different plantings. 6yrs, 12yrs and 35 yrs old.
AGING: 1 year in neutral barrique. 3 months in steel.
FARMING: Biodynamic, certified by Demeter; no chemicals used; rows grassed over; natural fertilizers and treatments of the vines (infusions of nettle, chamomile, etc); hand-harvest into small crates.
WINEMAKING: Spontaneous fermentation with native yeasts; 80-100% whole bunch fermentation; bottled by hand, with gravity.
TASTING NOTES: Cherry red color in the glass. Expressive, initially herbal nose, that unfolds into red fruits with spicy notes. Full, lively palate with a fresh finish.
