Merlot

A blend of spontaneously fermented beer and blonde ale aged in Merlot barrels with Brettanomyces (Brett), Lactobacillus, Pediococcus, along with fresh Merlot grapes.

Intinction is a mixed culture fermentation which we barrel age in Merlot barrels with freshly pressed Merlot grapes. This complex beer has nuances along with a slightly tannic finish from the grape skins. Intinction is refermented in the bottle creating a natural carbonation and a small layer of yeast sediment.
