TapRoom Beer Co. Mysterious Wayz
Our love of new and experimental is palpable – that is no mystery. When it comes to exciting new hops, we pounce on the opportunity to bring them into our pub and givethem the treatment. Coaxing new flavors, textures, aromas- that is what teaches us the quickest about where to lead next in our strange journey. Sometimes, we are met with raw materials with mysterious ways, with unique and certainly interesting complexities.
For our next West Coast IPA release, we brought in a couple boxes of hops from Yakima Chief Hops to trial in our brewhouse and fermentation cellar. Working with YCH to dial in which varietals we wanted to test was vital, as it provides the opportunity to align our current ‘style’ with something meaningful for the feedback loop.
We opted to push the grain bill just slightly with an extra handful of Vienna malt from LINC in pursuit of a touch more orange to the color. Then into kettle, we added supporting actors of Centennial and Columbus for bittering and texture. What we achieved is a well-saturated, infinitely curious spectrum of pine resin, lemon/lime crystals, space dust, and black currant.
Compelling and spooky – that’s our vibe.
After founding one of San Diego’s longest standing craft beer bars, Kevin and Kyle Conover looked to establish a world class, neighborhood brewery & restaurant in the heart of North Park. Brewing operations led by Daniel Cady.
Cady brings years of experience brewing a wide range of styles as well as numerous awards under his barrel aging program. His technical prowess and level of creativity create for a very unique skillset that comes through in all of his beers.
We have always created everything in the spirit of collaboration, innovation, independence and tradition. As brewers, beer lovers, and advocates of exceptional beer, we take great pride in our finished product.
