It should be mentioned that making Saperavi in Qvevri is not only the technology that excites, but right temperature in the vessel allows, to perfectly ferment and greatly condition the wine, 25 % of ripe and dried stems are used during the fermentation to give wine more softness and velvety. Application of this technique has not a mass character. As a result, only limited quantity is available.
