Having spent a fair amount of time in Munich and Bavaria in general, I really came to appreciate just what this style of beer is, and what it means to the people that love it and consume it regularly. The Germans take beer very seriously and Helles is no exception.
Complexity in light beer is hard to achieve for a lot of brewers. For us, we wanted to let the malt truly be “experienced”. This starts by choosing high quality European base malts.
Enhancing the malt flavor comes next. This is done by performing a decoction, where a portion of the mash is drawn off and boiled, then returned back to the mash to raise the temperature up to the next mash rest. This produces a flavor profile that really can’t be re-created any other way. Imagine a more pronounced malt flavor, without sweetness.
To round this out the hop flavor and aroma need to be present but not overwhelming or too dominant. We believe that Hallertau Hersbrucker hops fit the bill for our take on this Bavarian gem.
