Hand harvested and manually sorted-once in the vineyard and once at the sorting table in the winery
VINIFICATION
100% destemmed into open top fermenters. 5 day cold soak with 3 times daily punchdowns. Fermentation lasts an additional 10-12 days with 2 times daily pounchdowns. Once dry, pressed into 25% new and 75% one year-old Francois Freres barrels. The wine is aged in barrel for 12 months and settled in tank for 2 months.
