A Barrel Aged Blended Golden Sour Ale refermented with Raspberries and Orange Blossom Honey.
This is probably the most acidic beer we have released yet. The base beers for this blend were brewed back in Jan/Feb 2016. The blend was created, fruited and honey-ed back in March 2017. More Watsonville, CA raspberries were added in May, then more honey in June. It was finally packaged in August. This is an intense beer for people who enjoy lots of fruit and a jaw tingle. It’s a bit like raspberry lemonade.
Our process starts like a typical beer. We extract sugars from grain and boil the sweet water with hops. Once it leaves the kettle, the process begins to differ. In the Winter, we air-cool for spontaneous fermentation. Fermentations take place in oak wine or spirit barrels and last for a year at a minimum. The oak barrel, along with the lactic acid produced by the bacteria, gives it a vinous character similar to wine.
