EVELYN | MACERATE NOT FILTERED
A return to the past for a new expression of Verdicchio. Wine as my grandfather did, macerated on the skins and unfiltered. Fermentation takes place on the skins for a period that can vary between 30 and 40 days, depending on the vintage and the seasonal trend. The refinement continues on its lees for about 12 months and then in the bottle for at least 4 months.
The color is marked, the scent is persistent and ample, thanks to the numerous aromatic substances extracted. In the mouth it is balanced, harmonious and soft, with a full and enveloping taste. Not clarified and unfiltered to enhance the organoleptic characteristics.

Pairings : Cold cuts and cheeses; fish dishes, carpaccio, crudités and soups, or white meats. Try it with curry-based preparations and traditional Japanese cuisine.
