Our winemaking style allows us to makes wines that are high acid, low alcohol — well balanced expressions of these excellent vineyards. Vineyard: The Saveria Vineyard is located only 6 miles from the Pacific Ocean, 700′ above sea level, just outside the town of Corralitos. This vineyard is farmed by famed Santa Cruz “Grape Whisperer” vineyard manager Prudy Foxx who has a knack for finding forgotten vineyards that have gone feral and organically bringing them back to life. An ideal temperature flux results from the constant morning and evening fog, producing delicate yet intense Pinot Noir. Planted to a mix of Clones 777, 115 and 667
Soil: Alluvial fan of sand and calcareous soil
Viticulture: Farmed using sustainable and organic methods
Vinification: Fermented using native yeasts and 66% whole cluster and pressed to once used French oak barrels
Aging: aged sur lie for 10 months in once used French oak
Notes: The wine is a perfect marriage of crisp red fruit and dusty earthiness. There is an intermingling of salinity and elegant red berry on the nose. While the translucent ruby color might suggest a watery wine, this is anything but the case: there’s a lovely sweet raspberry on the front end, followed by dusty cherry and bergamot tea on the mid-palate leading to a bright but long finish.

AROMA: orange rind, anise, crushed rose petal, violet pastille & dried bing cherry
PALATE: candied fennel, sage, kamquat, dried strawberries & a strong mineral bent
FINISH: long and bright
