Aging — 9 months in French used barrels.
During the year, the climatology was favorable resulting in a vegetative cycle that allowed us expect a very good vintage. But in summer and harvest time, there was more rainfall than we expected. Once again, the preventive treatments performed in our vineyards, such as cluster thinning and stripping the leaves off allowed us obtain high quality grapes. The harvest began the 13rd September and was finished 22nd October.
GRAPE VARIETY: 100% GRACIANO
VINEYARD: Vines located in Corella area.
Hand-harvested. Light maceration at 8ºC in prefermentation to enhance aromatic potential. Controlled
temperature (22-24ºC) alcoholic fermentation in 15,000-liter stainless steel vats, 8-day maceration of skins with light stirring.
Soft pressing and pumping over. Malolactic fermentation of 25% in new French tight-grain oak barrels with the remainder in stainless steel. Subsequently aged for 9 months on its lees in French oak barrels (toasted medium-plus).
Gently clarified and lightly filtered.
APPEARANCE: Clear, medium intensity, ruby color wine.
NOSE: Clean, high intensity fresh aromas of black fruit such us blackberry, blackcurrant, also black pepper, cedar and earthy notes.
PALATE: Dry and fresh, soft tannins and medium body. Black fruit flavors, mineral hints and a long finish.
SERVING SUGGESTIONS: Ideal accompaniment for cured ham, stews, game and meat dishes. Serve at a temperature between 16 º and 18 ºC.
Spontaneous fermentation with wild yeast, soft winemaking.
